Molecular mixologist Eben Freeman (at Tailor) creates solid cocktails. Not "solid" as in well-made, balanced cocktails — though they may well be; I haven’t been over there — but "solid" as in Not Plasma, Liquid, or Gas. Currently, the lineup features a jellied Cuba Libre ("Cube-a Libre", perhaps, given its shape), a Ramos Gin Fizz Marshmallow, and White Russian Breakfast Cereal. (I’d always pegged the Dude as more of a Pop-Tarts kind of guy, but you never know.)
